Chicken Flatbread

This is yummy! 1 Flatbread, 1/2 cup light alfredo sauce, 1 cup sauteed mushrooms (saute in olive oil and garlic), 1 cup fresh spiniach, 1 cup shredded cooked chicken breast, 1 -2 cups shredded mozarella cheese. Spread sauce on flatbread, layer all other ingredients, top with cheese and bake. Bake at 350 for 20-30 minutes! Serve with Ceasar Salad and enjoy!

Awesome Tortilla Chips!

Okay people, I have started making my own tortilla chips! I do not know why I have waited so long to do this! A bag of chips is $4-5 dollars and they are not that good! A package of corn tortillas is less than $2.00! These are yummy, healthier, and fresh: One package of corn tortillas (you can figure out how many you want or need) 1/2 cup olive oil (heated in frying pan) cut tortillas into fourths, or smaller if you wish fry in oil till light golden brown drain on paper towel, sprinkle with sea salt eat with salsa or quac-enjoy!

Chelsea's Groovey Holiday Globs....??

Mix:
Chex, pretzels, Reese's peices, peanuts
Melt white chocolate chips
Mix together...drop in globs on wax paper, let harden
Eat, eat, eat, eat........enjoy!

Chelsea's Fried Ravioli

This is so easy and yummy!
Fresh Ravioli, any kind, cheese, sausage, chicken (I like to mix)
Olive Oil
Marinara sauce
Heat oil in frying pan
Fry ravioli a couple minutes on each side, they should be light brown, kind of crunchy, NOT burnt.
Drain on paper towel
Serve with warm marinara sauce (jar or homemade)for dipping.
*Use toothpicks if serving at a party...enjoy.

Polo Party Salsa Recipe (someone brought this to Sandy's Polo Party, it was a huge hit!

5 green onions-chopped
1 green pepper-chopped
1 red pepper-chopped
1/2 bundle cilantro-diced
1 can white corn-small shoepeg (drained)
2 cloves garlic-chopped
3 tomatoes-chopped
1/2 cup Itlian dressing
8 ounces Pace Picante sasuce (or any picante)
2 cups dry roasted peanuts (add just before serving)
can make the night before-except for peanuts

Kendra's Guacamole (my awesome neighbor)

4 to 5 avocados, peeled and sliced
Onion Powder 3- 4 shakes
Garlic Salt 3-4 shakes
Can of Regular Routel Tomatoes (generic will work)
4 oz can of Green Chilies
Lime juice (from bottle that looks like lime) 2-3 squirts
Stir ingredients together.
That’s it…adjust ingredients to taste.

Harlean's Recipe's (my groovey sis)

ARTICHOKE DIP
2 large cans of artichokes in water- Drain and cut up
1 large can chopped Ortega green chilis
1 cup mayonnaise
1 cup parmesan cheese
Mix and put in bowl
Bake for 20 minutes at 350
Serve with strong tortilla chips..

JOSEFINAS
French Bread (flutes) sliced medium thin, don't use ends
SPREAD (Goes on first)
Mix well:
2 lbs of soft butter
2 large cans chopped green Ortega chilis

TOPPING (Goes on second)
1 lb shredded Jack Cheese
2 cups Mayonnaise
Put spread on slices of bread, then topping. Spread topping to edges with a well rounded look.
Brown in Broiler.....not too long
Drain on paper towels before serving.
Josefina's are so fattening you may not want to include them, but oh so good!!!!!
