Yummy Summer Salsa Dip (got this from Bev during lacrosse)
2 Avacados Chopped Green Onion (as much as you prefer) Chopped cucumber (optional) 2 cans Rotel Tomatoes (do not drain) 1 can Corn (drained) 1 can Black Beans (drained & rinsed) 1/4 cup lite Italian Dressing Serve with Tortilla Chips or Crackers This stuff is great!

I really just make this up as I go each time – but here is the basic recipe:
Mash these ingredients together : 3 ripe avocados 1/3 cup Red Onion chopped. 1 clove garlic – crushed
Add juice from ¼ lime, black pepper and medium salsa to taste (your choice but I like the chunky style). I add cilantro if I have it – just two or three sprigs chopped up.
Lately, I have been adding 1/4 cup fresh chopped tomatoes from the garden. If you have a crowd, add ¼ cup cream cheese to make it stretch.

Harlean went to an Art Gallery Show and this is what she found! No Art, but....(well probably Art, but not the kind you hang on the wall-her hubby) :) anyway.... Spinach Tortillas Crumbled Feta cheese Soft cream cheese Craisins Chopped scallions. I haven't made them but the caterer said to: Spread cream cheese on Tortilla, Sprinkle the crumbled Feta Cheese, Sprinkle the craisins and scallions, Then roll up and chill in the refrigerator. Then slice.....Oh my gosh, they were the best things I've ever had.
Another thing she had: Round Tostita chips (scoops?) Sour cream with a little cayene in it. Salsa (a good one with beans and corn) She just took a chip, put a plop of sour cream on it and topped it with the salsa. You just picked up the chip and ate it.Simple and delish. You might want to try these. I will! They sound great!
Diane's Stuffed Mushrooms!
2 cans crab 1 small onion 3 cloves chopped garlic 1 cup seasoned bread crubs 1 cup fresh parmesan cheese sun dried tomato pesto sauce (small jar) large mushrooms 15-20 Saute' onions and garlic in olive oil, mix all ingredients together, clean and remove stems from mushrooms and stuff, cook stuffed mushrooms in butter (lot's) and white wine---yum! (adjust recipe accordingly, it depends on your taste and how many mushrooms you are making, you really can't mess it up, just watch the bread crumbs, you don't want it too dry.
Carolyn's Apple Dip (my friend from Ca. who I miss!)
Apple Dip 1 8 oz. pkg. cream cheese, softened 1/2 c. brown sugar 1/4 c. white sugar 1 teasp. vanilla 1 pkg. Heath toffee bits Mix together cream cheese, sugars and vanilla until smooth. Blend in toffee bits. (You might as well double this, because you'll eat 1/2 of it yourself, before the party starts!) Serve with apple slices.
Jamie's Yummy Mozzerella Stuff!
Cherry tomatoes cut in thirds Mozzarella string cheese cut 1/2 inch thick (slice into little rounds) Marinade in balsamic vinaigrette. (I like Paul Newman's brand). Serve with sliced gourmet bread: French, sour dough, cibatta, herbed.... Side note: Jamie made this for us and we used herbed cibatta bread (I think), anyway, it was easy and delicious, marinade for a couple hours or over night, let sit out about an hour before serving.....we ate it and ate it and ate it.....yum!

Guacamole: 4 large avacados 1/4 cup of chopped white or yellow onion (the smaller chopped, the better) 1 cup of chopped tomato Salt to taste I mix this all together but usually keep it pretty chunkie, that seems to be popular. When available, I squeeze a lime over it as well.
